Annie's Crab Cakes

 Ingredients
minced onion
2 T butter
2 beaten eggs
1/2 cup cream
1/2 cup soft bread crumbs
2 cups of crab meat
(sometimes I also some minced oysters or clams)
1/2 celery chopped really fine
1/2 of dry mustard
a dapple of lemon juice
some chopped parsley
a little salt and paprika

 Calories per serving
 
Instructions
Melt a 2 T of butter, add some minced onion and simmer until tender. Combine the other ingredients.

Chill this mixture for a few hours then shape into cakes.

Dip the cakes in flour and fry them in a skillet of melted butter. Quickly brown them on both sides so they keep their shape and then cook them slower for 5 minutes so they cook through.

You can deep fry them too if you want by dunking the formed cakes in an egg/milk mixture and then flour or breadcrumbs.
